Moroccan veggies soup:
Ingredient:
-2 large potatoes peeled and sliced .
-3 carrots peeled and sliced.
-1 small onion chopped.
-1 yellow squash peeled and sliced.
-1 cup sliced green beans.
-2 Tbsp chopped parsley and cilantro.
-2 Tbsp olive oil.
-1 tsp ginger pouder.
-1 tsp saffron pouder.
salt and black pepper.
Direction :
heat the pan on medium heat add oil then onion stir occasionally for 2 min .
then add all ingredient add one quart water cover pan for 20 to 30 min in medium heat untill the veggies are really tender or cooked well then switch the mixed to the food processor and blend all.
the soup is ready , serve it hot . Its so so delicious and rich .
